We parked the van up and explored vantage points in the early afternoon. After finding a perfect spot which overlooked the town we decided to eat. We headed back down into town, to a restaurant which we had seen on the way. Sharing a cassoulet (French sausage casserole) we chatted to a neighbouring table.
After a couple of hours and full stomachs we marched back up the hill, reaching the top just as the sky began to light up with rich pinks and purples. Our plan only allowed us to spend one night in Foix, and luckily this was the sky as the evening drew to a close.
